Artigiani Pastai Bondi boasts of being the only manufacturer in Italy to hold the trademark for the Ferrarese Pumpkin Cappellaccio IGP, the staple of Ferrarese cuisine.

According to the tradition handed down from generation to generation, cappellacci are also closed by hand by our sfogline.

Selection of raw materials

The selection process of our raw materials is very rigorous. When it comes to flours, we rely on the great professionalism of experienced suppliers who have been in the milling business for four generations.

Wheat flour, of the highest quality, is milled into cylinders using a state-of-the-art process. 100% Italian durum wheat semolina gives the pastry a distinct flavor.

Eggs from hens raised domestically combine perfectly with the other ingredients to create a balanced, fragrant and palatable pastry, as required by the Emilia-Romagna tradition.

At Artigiani Pastai Bondi, we have always considered the use of the best raw materials in the country to be fundamental in the production of our products.

By using first-rate ingredients, such as Parmigiano Reggiano and Taleggio DOP and Speck Alto Adige IGP, just to name a few, we are able to give our products a unique and refined taste.

Craftsmanship

Over the years, Artigiani Pastai Bondi has been able to innovate its processes and technologies while keeping the manual activity of pasta artisans at the center of its production, providing the market with a variety of formats such as handmade passatelli and rough pastry, just like homemade pasta.

For more than 30 years, the company has been incorporating bronze drawing for plain pasta into its production processes.

We pay special attention to our customers, in fact the products arrive on the tables fresh or, if packaged, respecting food standards thanks to a rigorous pasteurization process performed at low temperature so as not to alter the organoleptic properties of our pasta.
